Spinach and Cheese Rye Muffins

These delicious muffins are soft and make a wonderful breakfast treat.

Spinach and Cheese Rye Muffins

INGREDIENTS:

  • 2 cups rye flour
  • 2 cups cornflour or rice flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 1/2 cups milk
  • 30 ml oil
  • 2 eggs, beaten
  • 1 cup cooled cooked spinach
  • 1 1/2 cups shredded cheddar cheese

Preheat the oven 200 deg Celsius. Mix the cheese and spinach in a bowl. In a separate bowl, sift the rye, cornflour, baking powder, salt and pepper. Stir in the egg, oil and milk until well blended. Lastly, fold in the spinach and cheese.

Scoop into greased or lined muffin tins and Bake for 20-25 minutes, until lightly golden brown. (This recipe makes about 20 muffins).

Serve warm with butter and extra grated cheese.
